Great warm, but at their best when cold.

Ingredients:

  • chicken breasts or tenders
  • flour
  • 1-2 eggs
  • breadcrumbs
  • dried herbs of choice (e.g. Italian seasoning)
  • garlic powder
  • salt
  • olive oil

Instructions:

  1. Cut/pound the chicken to desired size and thinness.
  2. Prepare 3 dishes. In first, put flour. In the second, put egg, scrambled. In the 3rd, combine breadcrumbs, herbs/seasoning, garlic powder, and salt.
  3. In a pan, heat oil.
  4. Take your chicken pieces and thoroughly coat them first in flour, second in egg, then in breadcrumbs. Cook in batches until golden brown on each side.
  5. If, while cooking, the fallen breadcrumbs begin to burn, swap out oil for fresh oil.
  6. When done, transfer to a plate with a paper towel while cooking additional batches if needed.
  7. Serve hot or cold.
