charred leek chimichurri

A tangy, bright, and refreshing sauce for almost anything. Works with leeks, baby leeks, green onions, etc.

Ingredients:

  • baby leeks, leek, or green onions
  • 3 garlic cloves, minced
  • 1 shallot, minced
  • 1/2 to 1 cup parsley, minced
  • 1/2 tsp lemon zest
  • juice of 1 lemon
  • 4ish tbsp olive oil
  • 1/4 tsp cumin
  • red pepper flakes
  • salt
  • 1-2 tbsp water

Instructions:

  1. Add minced shallot, minced garlic, lemon zest, lemon juice to a bowl. Stir to combine.
  2. Add minced parsley, salt, red pepper flakes and ground cumin and olive oil (desired amount). Stir to combine and let sit for at least 30 minutes.
  3. While that is sitting, rub leeks with a olive oil. Grill over medium-high heat for 4-5 minutes, flipping frequently, until they are soft & charred. Remove and let cool.
  4. When cooled, chop up grilled leeks and add to sauce. Taste and add more salt or red pepper if desired. To thin, add water if needed.
