A perfect comfort meal, as long as you can get your hands on escarole.

Ingredients:
- 1 large yellow onion, diced
- garlic
- 3-4 medium carrots, diced
- 3 medium golden potatoes, diced
- 3 spicy italian sausages (optional)
- about 2-3 bunches of escarole*
- 4 cups chicken broth
*If you can’t get your hands on escarole, you can use curly or Belgian endive as an acceptable substitute. You also can use radicchio as a substitute— however, if you use radicchio it will turn your soup a rather unappealing grey.
Instructions:
- Remove the sausage from its casing and cook in a large pot until browned.
- Add garlic and lightly cook.
- Add onion, carrots, and potato and sauté for 1-2 minutes.
- Add the broth and escarole.
- Cover and let come to a boil. Lower heat to simmer and cook for 1 hour.
- Serve with grated cheese and bread.
