escarole soup

A perfect comfort meal, as long as you can get your hands on escarole.

Ingredients:

  • 1 large yellow onion, diced
  • garlic
  • 3-4 medium carrots, diced
  • 3 medium golden potatoes, diced
  • 3 spicy italian sausages (optional)
  • about 2-3 bunches of escarole*
  • 4 cups chicken broth

*If you can’t get your hands on escarole, you can use curly or Belgian endive as an acceptable substitute. You also can use radicchio as a substitute— however, if you use radicchio it will turn your soup a rather unappealing grey.

Instructions:

  1. Remove the sausage from its casing and cook in a large pot until browned.
  2. Add garlic and lightly cook.
  3. Add onion, carrots, and potato and sauté for 1-2 minutes.
  4. Add the broth and escarole.
  5. Cover and let come to a boil. Lower heat to simmer and cook for 1 hour.
  6. Serve with grated cheese and bread.
