antipasto pasta salad

A favorite summer porch meal. Easy and fast to throw together—and surprisingly hearty for any season. Also great to bring to a party.

Ingredients:

  • pasta
  • hot soppressata, sliced small
  • cucumber, cubed
  • grape tomatoes, halved
  • black or kalamata olives, roughly chopped (or both)
  • italian parsley, chopped
  • shallot, sliced thin
  • feta cheese
  • balsamic vinegar
  • extra virgin olive oil
  • lemon juice

Directions:

There’s not much direction for this one: toss it all into a bowl and dress to taste. If you take out the cheese in this recipe (or forget to add it), this will lose a lot of its depth and it will not stay on your fork.

For ratios: you probably want more stuff than pasta, but to each their own.
