Creamy, sharp, and satisfying. Ostensibly from TikTok, but shockingly good?

Ingredients:
- 1 block of sheep’s milk feta (note: cow’s milk doesn’t cut it)
- 3 pints of cherry or grape tomatoes
- 2-3 shallots, roughly quartered
- crushed garlic to taste
- 2-3 sprigs of fresh thyme
- salt & pepper
- 1/2 cup olive oil
- pasta
- lemon juice (optional)
Directions:
- Preheat oven to 400°
- In a large baking dish, place feta in the center. Surround the feta with the tomatoes, shallots, garlic, and thyme.
- Drizzle olive oil over feta and rest of the pan.
- Bake for 45 minutes or until feta is golden and tomatoes have burst.
- Meanwhile, cook pasta. Reserve 1/2 cup pasta water before draining.
- When the tomatoes & feta are done, remove from oven and mix to combine. Add pasta water to desired level of creaminess (important!). Add lemon juice to taste if desired.
- Serve as is or with chicken (recommended).
