no-cook summer tomato sauce

Got a bunch of beautiful tomatoes from the farmers market and want to experience them in all their glory?

Ingredients:

  • tomatoes, preferably heirloom
  • garlic
  • basil
  • balsamic vinegar
  • a nice extra-virgin olive oil
  • salt and pepper
  • feta
  • a fun pasta shape

Directions:

  1. Dice tomatoes and put in a bowl in chunks. Do not discard the tomato seeds and juice.
  2. Stir in diced garlic, chopped basil, salt, and pepper. Amounts to taste.
  3. Let marinate for at least 1 hour at room temperature.
  4. While that is marinating, after about 45 minutes, cook and drain pasta.
  5. Top pasta with sauce. Serve with crumbled feta on top.
