Everyone loves a good dessert-for-breakfast situation.

Ingredients:
- 1 1/2 cups flour (any kind)
- 1/2 tsp salt
- 1 tsp baking soda
- 1/2 cup fake butter, room temperature
- 3/4 cup sugar (white, brown, turbinado, coconut, etc.)
- 1 large egg
- 2 tsp vanilla
- 3 large bananas, ripe & mashed
- 1 cup wild blueberries, frozen
- 1/2 cup nuts, if desired
Directions:
- Preheat oven to 350F. Put cups in muffin or cupcake pan.
- In large bowl combine butter and sugar until creamy. Add in egg and vanilla and mix until well blended. Add mashed bananas and mix again.
- Add salt and baking soda, and mix together with a wooden spoon.
- Add flour and mix until just incorporated. Do not over mix.
- Fold in blueberries and nuts (if desired).
- Divide batter among prepared muffin/cupcake pan, sprinkle with sugar for garnish.
- Bake for 20-25 minutes or until toothpick inserted comes out clean.
