banana & wild blueberry breakfast muffins

Everyone loves a good dessert-for-breakfast situation.

Ingredients:

  • 1 1/2 cups flour (any kind)
  • 1/2 tsp salt
  • 1 tsp baking soda
  • 1/2 cup fake butter, room temperature
  • 3/4 cup sugar (white, brown, turbinado, coconut, etc.)
  • 1 large egg
  • 2 tsp vanilla
  • 3 large bananas, ripe & mashed
  • 1 cup wild blueberries, frozen
  • 1/2 cup nuts, if desired

Directions:

  1. Preheat oven to 350F.  Put cups in muffin or cupcake pan.
  2. In large bowl combine butter and sugar until creamy.  Add in egg and vanilla and mix until well blended.  Add mashed bananas and mix again.
  3. Add salt and baking soda, and mix together with a wooden spoon.
  4. Add flour and mix until just incorporated.  Do not over mix.
  5. Fold in blueberries and nuts (if desired).
  6. Divide batter among prepared muffin/cupcake pan, sprinkle with sugar for garnish.
  7. Bake for 20-25 minutes or until toothpick inserted comes out clean.
