chicken, kale, and sweet potato skillet

A warm and hearty skillet packed with veggies. A great one-pan meal!

Ingredients:

  • Two sweet potatoes (regular or purple)
  • 1 1/2 – 2 lbs chicken
  • Kale, a lot
  • 6 bacon strips
  • Garlic
  • 1 C chicken broth
  • Red chili pepper flakes

Directions:

  1. Cut the chicken into small pieces and season with salt, pepper, and red chili flakes.
  2. Cut the sweet potato into small cubes.
  3. In a skillet over medium heat, add the bacon, and cook fully. Remove. Leave some of the bacon fat—if too much remains, remove some.
  4. Add the chicken to the skillet and cook fully. Remove.
  5. In the same skillet, add the garlic, cook for a few seconds. Add the chicken broth and deglaze. Add the sweet potatoes.
  6. Cook until the sweet potatoes are mostly—but not totally—done. You may need to add water at this stage as the broth cooks off.
  7. Turn the heat to low and add the kale to cook—in batches, if necessary.
  8. Return the chicken and bacon to the skillet and stir until combined.
  9. Add additional red pepper flakes after serving, if desired.
