A warm and hearty skillet packed with veggies. A great one-pan meal!


Ingredients:
- Two sweet potatoes (regular or purple)
- 1 1/2 – 2 lbs chicken
- Kale, a lot
- 6 bacon strips
- Garlic
- 1 C chicken broth
- Red chili pepper flakes
Directions:
- Cut the chicken into small pieces and season with salt, pepper, and red chili flakes.
- Cut the sweet potato into small cubes.
- In a skillet over medium heat, add the bacon, and cook fully. Remove. Leave some of the bacon fat—if too much remains, remove some.
- Add the chicken to the skillet and cook fully. Remove.
- In the same skillet, add the garlic, cook for a few seconds. Add the chicken broth and deglaze. Add the sweet potatoes.
- Cook until the sweet potatoes are mostly—but not totally—done. You may need to add water at this stage as the broth cooks off.
- Turn the heat to low and add the kale to cook—in batches, if necessary.
- Return the chicken and bacon to the skillet and stir until combined.
- Add additional red pepper flakes after serving, if desired.
