A common breakfast-for-dinner fare, but great for a hearty breakfast. Full of veggies and easy to top with eggs for more protein. Best with hot sauce.

Ingredients

  • Potatoes
  • Sweet potato
  • Zucchini
  • Squash
  • Onion
  • Red pepper
  • Spinach
  • Eggs
  • Hot sauce

Directions

  1. Chop everything into small pieces. Rinse (or soak) potatoes after cutting so that they brown. Brown everything in order: potatoes, sweet potato, zucchini, squash, red pepper.
  2. Wilt the spinach in separate pan, set aside. Fry eggs.
  3. Serve with spinach on top of the hash, with the fried egg on top of both. Flavor with hot sauce.
