A common breakfast-for-dinner fare, but great for a hearty breakfast. Full of veggies and easy to top with eggs for more protein. Best with hot sauce.

Ingredients
- Potatoes
- Sweet potato
- Zucchini
- Squash
- Onion
- Red pepper
- Spinach
- Eggs
- Hot sauce
Directions
- Chop everything into small pieces. Rinse (or soak) potatoes after cutting so that they brown. Brown everything in order: potatoes, sweet potato, zucchini, squash, red pepper.
- Wilt the spinach in separate pan, set aside. Fry eggs.
- Serve with spinach on top of the hash, with the fried egg on top of both. Flavor with hot sauce.
